Raziskava, katere izsledke je raziskovalna skupina objavila v vodilni reviji s področja znanosti mesa, naslavlja problematiko kirurške kastracije pujskov. To tradicionalno rejsko opravilo se izvaja zaradi preprečevanja neprijetnega vonja mesa. Sektor prašičereje v EU to prakso ukinja, kar predstavlja težave zaradi spremenjenih lastnosti surovine za nadaljnjo predelavo, še posebej za proizvode višjega kakovostnega segmenta kot je pršut in druge tradicionalne mesnine.
